Tamales!

Anyone here have some good recipes and directions on how to make them homemade? While we’re at it, any other home cooking that you are proud of?

To be fair I’ll give you one of mine.

Get the following:
Five pounds of ground beef.
Two cans each of Pinto Beans, Kidney Beans, and Black Beans.
Three bell peppers of any color.
Get two big cans of tomato souse.
For the lazy person get a few bags of chilly mix powder (we normally mix our own spices).
Get yourself two onions.
Also, be sure to have three cloves of garlic on hand for the cooking.
Optional: You can also put other veggies in there to your liking.

Now pre-cook the beef on its own. Get your hubby (normally me) to cut all the veggies; he should enjoy it at some point. While he cuts and the beef browns, you can open the cans if you like of the beans. Get everything into a pot and cook it on medium for about 40min, depending on stove. Be sure to stir it, it can stick.

Now today I had my wife use the rice cooker and she cooked just plain brow rice. This went along wonderfully with my chips. My wife normally enjoys corn bread with it, and our renter had jalapenos with it.

All in all a good spicy food that can feed a very large family and still have left-overs that keep and keep and keep.

Cooking is almost a bigger hobby for me than writing. I lerve it.

The latest new recipes I've tried: vegetarian stuffed green peppers, goulash (old school), brownies, and hubby and I finally had the guts to cook filet mignon.

Next on my hit list:

Either carrot cake or coconut cake for mother's day.
Flax seed and peanut butter granola bars. (my granola bars last year were okaaay, but could be better)
Forest mushroom risotto

After the cakes above, I won't really allow myself to bake heavy desserts till the weather grows cold again. We try to stick to summer fare out of our garden. With my herbs going in the ground this weekend, I should be able to get one of our favorite spring salads to the table again, a tasty Tuna and green bean salad from capri. In two months, I'll be doing caprese salads again once my tomatoes start getting ripe! Woot

Here's the Tuna and Green Bean salad my family can't stop eating. It's from Giada De Laurentis:


1 1/2 pounds slender green beans, trimmed, halved crosswise
3 teaspoons salt, plus more to taste
2 large red potatoes, diced
1/3 cup freshly squeezed lemon juice
2 garlic cloves, finely chopped
1/3 cup extra-virgin olive oil
1 teaspoon dried oregano
3/4 teaspoon freshly ground black pepper
8 ounces cherry tomatoes, halved
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh Italian parsley leaves
9 ounces canned tuna packed in oil, drained

Cook the green beans in a large pot of boiling water until crisp-tender, stirring occasionally, about 4 minutes. Using a mesh strainer, transfer the green beans to a large bowl of ice water to cool completely. Drain the green beans and pat dry with a towel. Add 2 teaspoons of salt to the same cooking liquid and bring the liquid to a simmer. Add the potatoes to the simmering liquid and cook until they are just tender but still hold their shape, about 8 to 10 minutes. Transfer the potatoes to the ice water to cool completely. Drain the potatoes and pat dry with a towel.

In a small bowl, whisk the lemon juice, garlic, oil, oregano, 1 teaspoon salt and 3/4 teaspoon pepper. Place the tomatoes, basil and parsley in a large serving bowl. Add the tuna and toss gently to combine. Add the green beans and potatoes and gently combine. Pour the dressing over the salad and toss to coat.
