Santa Fe Chix w/Blk Beans & Br Rice.

Simple recipe with some good flavor. This recipe makes 2 servings.

Ingredients:
1 c Instant Brown Rice
1 c water or Reduced sodium Chix Broth
8 oz Chicken, cut into 1 inch pieces (add more chix if you want)
1 15oz can of Black Beans (drain and rinse)
1 4oz can of green chiles
1 red pepper chopped small
2 tbsp fresh cilantro
1 tsp cumin
1/2 tsp salt
1/2 tsp cayenne pepper
1/2 tsp blk pepper

Place all ingredients in a large saucepan (rice on bottom). Bring to a boil after it boils reduce heat to medium and cover. When all the liquid is absorbed (about 10 min). Remove from heat wait 5 min the fluff with a fork. You can also add low sodium can of corn.
