Chicken Mango Spinach Salad

Prep Time: 10 min
Total Time: 10 min
Makes: 5 servings, about 2 cups each

1 bag (10 oz.) baby spinach leaves
1 medium mango, peeled, sliced
1 medium avocado, peeled, sliced
1 small red onion, thinly sliced
2/3 cup Vinaigrette Reduced Fat Dressing
2 cups cooked chicken strips (about 10 oz.)

Toss spinach with mango, avocado and onion in large bowl. Add dressing; mix lightly. Spoon onto 5 plates. Top with chicken. Serve immediately.

Joe... knock it off. You're going to make the rest of us look bad. How.. may I ask.. are those of us who just make up recipes suppose to come up with nutritional info. I mean really.. :rolleyes:

Okay... I'm just teasing. Back to work. Your doing a good job suppling us with healthy recipes.

Pssst... Lynn. Lets throw in some unhealthy recipes to balance this out. What do you say... maybe something with chocolate. :p
