This may not be all that healthy but this bread is s-o-o-o good. Besides, I don’t make it that often. I make it mainly at Christmas time. I make several loaves, one for my brother-in-law by marriage (for his birthday) and one for my sister-in-law and their daughter because the b-i-l won’t share his! LOL! I make 2-3 loaves for our family and sometimes several for the neighbors. And when I make it, a big mouse comes out of hiding and tries to eat it all. It’s a wonder anybody gets any ‘cuz my big-mouse husband wants to nibble it all away!

Dilly Bread

1 pkg. dry yeast, not the rapid rise kind
¼ c. water 110-115 degrees
1 c. creamed cottage cheese, heated to lukewarm (I use low-fat)
2 T. sugar
1 T. dried minced onions
1 T. butter softened
1 egg
2 ¼ c. all-purpose flour
2 t. dill seed (not dill weed)
1 t. salt
¼ t. baking soda

Dissolve yeast in warm water. In large mixing bowl, combine all ingredients except flour. Then add flour gradually, which forms a stiff dough. It’s not necessary to use an electric mixer. Cover and let rise in a warm place. I warm up the oven to about 200 degrees or so and turn if off. Let it rise for 60 min. Stir it down or use floured hands and turn it into a greased (or well sprayed) large loaf pan. Warm up the over again and let rise 40-50 min. If you cover it this time, use something that can be sprayed so it won’t stick to the dough. Bake at 350 degrees for about 35 min. or until golden brown and toothpick comes out clean.

When ready to serve it, slice, butter, and wrap in tin foil and reheat.

Wait till you smell it baking...oh, my! Now I'm gonna have to make some. It is so-o-o good!
